How to make snow-skin mooncakes

1. Prepare the ingredients (glutinous rice flour is not included in the photo).The pumpkin puree I used is a bit dry (basically no moisture).There is no pulp in the red heart dragon juice.The custard filling in the photo It’s 350 grams, so you won’t need that much.

2. Fry the glutinous rice flour in a pot over low heat until the color turns a little yellow., used as anti-sticking powder.

3. Pour boiling water into the ice skin powder.

4. Stir evenly and allow to warm.

5. Knead into dough.

6. Divide into 40g small dough and 80g large dough.

7. Mix 40 grams of small dough with pumpkin puree, red dragon juice and green juice powder respectively.Mix well (the pumpkin puree is a bit dry, you can dip your hands in boiling water when kneading), and then divide it into small doughs of 20 grams each.

8.Take a piece of dough and flatten it with your hands, put 20 grams of custard filling on it , wrap it up, close and round.

9. Do the same for other dough.

Tips
1.The ice skin powder is a little sticky when kneaded with hands after it is warmed.You can wear disposable gloves when operating.
2.I want to make mooncakes for a few months less, so I use less snowskin powder.The finished mooncakes are 40g each, which is a bit thin.It is recommended to make 50g mooncakes, with 25g of dough and 25g of filling.Try not to make 100 grams, smaller ones look better.
3.When mixing several colors to make pie crust, it is best not to exceed three colors.
