Old Duck ( 1/2 ) | Pickled ginger ( 1 piece ) |
Laotan pickled radish ( 6 pieces (equivalent to a fresh whole) ) | Radish ( 1 ) |
Cooking wine ( 10 ml ) | Ginger slices ( 4-6 slices ) |
Dried Sichuan peppercorns ( A pinch ) |
How to make sour radish and duck soup

1. Prepare the main ingredients.

2.Add enough water to the pot, add the washed duck pieces, Ginger slices, dried Sichuan peppercorns and cooking wine.

3. After the lid comes to a boil, continue to blanch for 2-3 minutes.

4. Remove the float and wash it with warm water.

5.Put it into a stewpot, add enough water, open the lid and bring to a boil over high heat , skim off any floating residue with a spoon.

6. Cut the Laotan pickled radish and pickled ginger into thick slices and add.

7. Cover and simmer over low heat for about 2-3 hours.

8.Peel the radish and cut into strips.

9. Add to the stew pot and continue cooking for about 30 minutes until the radish is completely cooked.

10. Serve immediately.
Tips
1.The duck must be old, so it can withstand stewing and have therapeutic effects.
2.The amount of Laotan pickled radish should be adjusted according to personal taste.You can also add 1-2 pickled peppers to enhance the flavor.
3.Laotan sour radish has a strong salty taste.Generally, there is no need to add additional salt.If it has a strong taste, adjust it by yourself.
4.Choose fresh radish varieties: long radish, round-root radish or green-head radish.
