How to make braised chicken with mushrooms

1. Disembowel the three-yellow chicken, clean it and chop it into pieces, add two slices of ginger, a little cooking oil and cooking wine! Marinate with thirteen spices, salt, 1 teaspoon cornstarch for half an hour.Soak the mushrooms in cold water for half an hour, blanch and set aside.Do not squeeze the blanched mushrooms dry.Boil the quail eggs and remove the shells.Set aside.

2.Pour a little more oil into the pot than usual for cooking.Heat oil, pour ingredients 2-12 into the pot and saute until fragrant.(Please see the list of auxiliary ingredients)

3.Pour in the chicken and stir-fry to remove the oil.Add appropriate amount of cooking wine.Add a little spice and stir-fry evenly.

4.Pour in the blanched shiitake mushrooms.Continue to stir-fry for two minutes! Bring to a boil over medium heat, cover the pot and simmer for fifteen minutes.No need to add water.

5.Fifteen minutes later! Add the cooked shelled quail eggs, add an appropriate amount of dark soy sauce, salt, and an appropriate amount of sugar, stir-fry evenly and continue to simmer for fifteen minutes.

6.Plate it up.

Tips
The entire process of stewing chicken does not require adding water.Just use the water and cooking wine to simmer the blanched mushrooms without drying them.The three-yellow chicken I bought weighs about a pound and a half and it only takes 30 minutes to simmer! The stewing time depends on the size of the chicken.
