Ingredients
Red beans ( 250g ) | White sugar ( 120g span> ) |
Peanut oil or blended oil ( 80g ) | Cooked flour ( 20g ) |
How to make red bean paste filling for mooncakes

1.This is a picture of the food being pureed by a food processor.Previous steps: Put the red beans in the pressure cooker and cook them without adding pictures.If you cook the unsoaked red beans for about 1 hour and the soaked ones for 30 minutes, it will be fine if they are soft and rotten.Then put it into a food processor and puree it.Add less water.If the red bean soup is enough, you don’t need to add any water.Otherwise, if you stir-fry for a while with too much water, you will be exhausted.

2. Pour the red bean puree made by the food processor into the pot, and use medium to low heat., stir-fry for a few times, add white sugar and continue stir-frying until the sugar melts.Then pour in the oil in three batches, stirring each time until the oil is melted into the mud.

3. When it becomes a little lumpy and dry as shown in the picture, add the cooked flour.(Just put ordinary flour in the pan and stir-fry quickly until it turns slightly brown) and then continue to stir-fry.

4.Add cooked flour and fry until it forms a dough and is dry.It is successful.
