Tips
The softened butter does not melt into a liquid state as usual.It just needs to be soft enough that you can easily poke it with your fingers! Choose larger mint leaves as they will shrink and become smaller after roasting! Don’t overfill the baking sheet with cookies, leave enough space because the cookies will expand slightly after baking! After baking, let the cookies cool at room temperature before handling them to avoid them from breaking and affecting their appearance!
