Ingredients
Low-gluten flour ( 40g ) | Eggs ( 4 ) |
Milk ( 40g ) | Corn oil ( 40g ) |
Sugar (egg yolk) ( 10g ) | Sugar (protein) ( 30g ) |
Lemon juice/white vinegar ( 4 drops ) | Cream (appropriate amount) |
How to make hand-rolled cream cake

1.Get the materials ready.

2. Separate egg whites and albumen.Add 10g sugar to the egg yolks and stir evenly.

3. Add oil and mix well, then add milk.

4.Sift in low-gluten flour.

5. Place the mixed egg batter and beat the egg whites.

6. Drop lemon juice into the egg whites and beat with an electric egg beater.

7. Add sugar in three batches and beat until small peaks form.

8. Mix 1/3 of the egg white paste into the egg yolk paste, and mix well using stir-frying method ( Be careful not to draw circles to avoid defoaming).

9. Pour the mixed egg paste into the remaining 2/3 of the protein paste, and use the same mix quickly.

10. Pour the mixed egg batter into a non-stick baking pan (it is recommended to cover it with greaseproof paper) , smooth it out, and shake it twice to release the bubbles.

11. Preheat the oven at 160 degrees for 10 minutes, bake in the oven for 18 minutes, and then color.Remove and let cool while whipping the cream.

12. Spread the cream (the cream has been whipped before making the layer cake).

13.Wrap into rolls and place in the refrigerator to chill.

14.Slice and plate.
