How to make shortbread with bean paste

1. Soak the red beans the night before and set aside.Steam the red beans in a rice cooker for about 35 minutes, until they can be easily mashed into red bean paste.

2. Make water-oil crust: Heat butter over water to melt, add water, sugar, and flour Knead the dough and let it rise for 20 minutes.Make puff pastry: Knead salad oil and flour into dough and let it rise for 20 minutes.The picture above shows oily skin and the picture below shows puff pastry.

3. Divide the water-oil crust and puff pastry into 20 equal parts.

4. Roll out the water-oil dough into dough, put in the puff pastry dough and wrap it well.Place the bag top side down.

5. Roll out the wrapped dough into a long strip and roll it up.Rotate 90 degrees, roll out into a long strip, and roll up.Flatten and roll into round dough.The order of the pictures below is from left to right, top to bottom.

6. Add 2 to 3 spoons of sugar to the steamed red beans and mash them into red bean paste ( I used a rolling pin with one end wrapped in plastic wrap as a tool for reference).Put the red bean paste into the rolled dough to make the filling, wrap it up well, and place it with the mouth of the bag facing down.The order of the pictures below is from left to right, top to bottom.

7. Beat the eggs and brush a layer of egg wash on the outside.Sprinkle with black sesame seeds.

8.Put it in the oven, mode: middle and lower rack, temperature: 200 degrees.The time is 35 minutes.Note: Each oven is different, so it is best to adjust while observing.Red bean paste patties, freshly baked and delicious.
Tips
When steaming red beans, be careful not to add too much water, which will cause the red bean paste to become thinner.Personally, it is recommended to add more water than the red beans.
