Noodles ( 400g ) | Salt ( a little ) |
Oyster sauce ( one spoon ) | Garlic ( 2 capsules ) |
Onion ( Half ) | Carrot ( Half root ) |
Pak choi ( 4 roots ) | Yanghe ( 4 capsules ) |
Purple eggplant ( Half ) | Cilantro ( 2 roots ) |
MSG ( a little ) | Ketchup ( One tablespoon ) |
How to make Xinjiang fried noodles

1.Prepare the noodles

2.Wash and cut all vegetables

3.Put a little garlic and onion in the pot and saute until fragrant

4.Add lotus seeds and carrots and stir-fry for one minute

5.Pour in the eggplant strips

6.Add salt, oyster sauce, and a little water.Add the cabbage and the remaining minced garlic and onions

7. Stir fry and add tomato paste

8.Put the noodles under water into a cold water basin after they are medium cooked

9.Put the noodles into the wok

10. Stir well and add coriander

Tips
It’s better to add minced meat, plus chilli.Our family doesn’t like either of these, so we didn’t add it.
