Ingredients

Lean Cuttlefish Rice Noodles Recipe

1.Prepare all ingredients

2. Soak the dried cuttlefish in cold water for more than 2 hours.After soaking, remove the membrane, bones and internal organs, and cut into pieces.Silk for later use.

3. Boil Magu rice noodles in boiling water until there is no hard core, cover and simmer for 15 Minutes, take out the cold water and soak in cold water for later use.

4. Cook eggs in boiling water, peel and set aside.

5. Add minced ginger, cooking oil and steamed fish soy sauce to the minced pork belly, stir well and marinate 20 minutes.

6. Add grated ginger and green onion to the pot.

7. Stir-fry the minced pork belly until fragrant, and stir-fry the fatty meat to release the oil.

8. Add shredded cuttlefish, add cooking wine and stir-fry until fragrant.

9.Add in dried chili peppers, star anise and bay leaves and stir-fry evenly.

10.Add enough rice noodles for four people to boil.

11. Skim off the foam from the boiled cuttlefish lean meat soup and put the eggs into the soup., select the soup mode of the high-pressure rice cooker and simmer for about 40 minutes.

12.After the lean cuttlefish soup is simmered, add another pot of water and put the rice noodles in it.Blanch in boiling water for ten seconds, take out a serving bowl, and add chopped green onions and half an egg.

13.Pour in the salted cuttlefish lean meat soup.

Tips
1- Minced pork belly can be fat or lean, and lard can make the cuttlefish more fragrant.
2-When cooking dry rice noodles, add as much water as possible and stir constantly to avoid sticking to the pot.The eggs can be cooked at the same time.
3-When eggs are placed in boiling water, their shells will not break easily and will be easier to peel off.When peeling the eggs, crack all the shells and the eggs will come out directly.
4-The meat marinated in oil and steamed fish soy sauce is very tender and not sticky.
5-When stewing lean cuttlefish soup, do not add salt first to avoid producing too much submersible fat.
Warm tips: I used blended oil for marinating the meat and vegetable oil for frying the meat.Because the vegetable oil needs to be heated to be useful, marinating the meat directly will taste raw.If you don’t like vegetable oil, you can always use blended oil.If you don’t like spicy food, you can omit the chili pepper.Friends who don’t have a high-pressure rice cooker can also use a ceramic soup pot to stew, but the longer the time, the stronger the flavor will be.
