Tips
The amount of glutinous rice depends on the amount of purple sweet potatoes.I used two purple sweet potatoes (medium size) for three people. You can increase or decrease the white sugar according to your own taste; the purple sweet potato noodles should be moderately soft and hard, if it is too hard.If it is too soft and not shaped, it will affect the appearance; you can add the fillings you like, and make the stuffed dumplings larger. If they are too small, they can’t contain the fillings.I don’t like them that are too sweet, so I don’t add fillings; in order to ensure that they are made. The glutinous rice balls are the same size. You can roll the noodles into long strips and then cut them into even-sized pieces with a knife (I forgot to take a photo to explain this step)
