How to make noodles with scallion oil

1.Let’s start with the sauce: 1 spoon of oyster sauce, 2 spoons of dark soy sauce, 3 spoons of light soy sauce, and 2 spoons of sugar.Pour into a bowl and mix well (mix the sauce first and set aside) to taste You can adjust it appropriately whether it's light or heavy.

2. Heat the air in the pot, pour in an appropriate amount of oil, take out a green onion and remove the heart.Just put the white scallions into the oil and fry until browned.Turn to low heat and take out.Then add the green scallions and fry (don't fry the green scallions.Take them out).Continue to keep the fire low.Finally add the shrimp skin and fry until fragrant and crispy.When the shrimp skin is fried golden, turn off the heat.Add the previously prepared sauce and stir with residual heat.

3. Boil the noodles in the pot, (because I didn’t buy noodles, I used dried noodles instead , but it’s also quite delicious.You can make it according to the noodles you like.) Cook in cold water, drain the water, pour the scallion oil into the noodles and mix evenly, and sprinkle with the fried green scallions and white sesame seeds..The taste is amazing.
Tips
Don’t fry the scallions too much
Don’t overcook the noodles.Be sure to rinse them with water and drain them
