How to make lotus paste and egg yolk mooncakes

1. Roll the salted duck egg yolk in the alcohol., dip the surface of the egg yolk with white wine, bake it in the oven until it is 70% cooked, without cracking or producing oil

2.After the roasted egg yolks are cooled, soak them in peanut oil and refrigerate them for 1 day

3.Invert syrup, alkaline water and peanut oil and mix well

4.Sifter Add low-gluten flour and high-gluten flour

5. Stir until the dough is smooth and wrap it in plastic wrap.Refrigerate for at least 1 hour

Bake at 200 degrees for 5 minutes, let it dry for a while and then brush the surface and surrounding area with egg wash.Bake at 180 degrees for 5 minutes (it is recommended not to use a silicone brush.I used a silicone brush here.The pattern was too messy to bake out in the end.I really didn’t have a fine brush, so I used a silicone brush to brush it and blow the egg liquid away hard to ensure the pattern)
18. Let cool, then lightly brush with egg wash, and bake at 150 degrees for another 5 minutes (the temperature depends on your own oven, if the temperature is constant, it can always be baked at 180 degrees)

19. Spray water and bake once at 200 degrees, brush with egg wash and bake three times at 180 degrees (the temperature is determined according to your own oven, I used 180 degrees for the first time, 160 degrees for the second time, and 150 degrees for the third time).After baking, take it out and let it cool immediately.After it is completely cool, put the mooncakes into the packaging box, put a deoxidizer bag at the bottom of the packaging box, and then Put it in a packaging bag and seal it for 3 days.If there is no deoxidation package, seal it and put it in the refrigerator to return oil
