How to make Pingqiao tofu soup

1. Tofu is made from soft tofu, also known as southern tofu.

2. Remove the old skin from the tender tofu and trim it neatly.

3.Cut into thick slices of about 1cm.

4.Change it to a thin piece of about 1mm.

5. Use a knife to stand up a group of 4 to 5 pieces, and change it to Diamond shaped piece.

6. Add a little salt to boiling water, soak the diamond-shaped tofu slices, and remove the beans It smells fishy, and secondly, the tofu soaked in salt water will not break easily.

7.Cut Jinhua ham into diamond-shaped slices the same size as tofu slices.

9. Then use some mushroom skins to change into diamond-shaped slices.

Tips
Don’t add too much salt to the boiling water for soaking the tofu slices, 2 to 3 grams is enough.You can also add a little MSG, chicken essence, etc.to enhance the freshness according to your needs.It should be noted that if you are not sure about thickening, add it in several batches until the consistency is about the same.Push it evenly with the back of a spoon so that the tofu will not break easily.
