2. Chop the tomatoes into dices, peel the potatoes, cut them into pieces and soak them in clean water to wash off the starch p>

3. Heat the oil in the pan, pour in the donkey meat and stir-fry for about 1 and a half minutes, pour in two Add cooking wine and stir-fry, add onions, ginger, garlic, spices, and peppercorns and stir-fry until fragrant, sprinkle with a pinch of sugar and stir-fry

4., then pour in diced tomatoes (the purpose of adding tomatoes is to make the donkey meat softer) and stir-fry for about 2 minutes until the diced tomatoes are soft
5., then add the bean paste and stir-fry until the bean paste is fragrant (the amount of doubanjiang depends on whether you like it spicy or not, but it must not be too little), Then add 2 tablespoons of light soy sauce and stir-fry to enhance the flavor.Add half a tablespoon of dark soy sauce to enhance the color and flavor, then stir-fry for about a minute.
6.Add boiling water or the broth used to blanch donkey meat to cover about 1 knuckle of the ingredients, bring to a boil over high heat, remove the foam on the surface, add a drop of vinegar, and then turn to low heat and cover.Cover the pot and cook for about 40-60 minutes (the specific time depends on the amount of water)

7.Turn to fire, Add potatoes, add an appropriate amount of salt and MSG (I don't eat MSG at home), stir evenly, and taste the soup for yourself. If it tastes right, cover it with a lid.Stew the potatoes over medium-low heat until they are tender, then turn off the heat.
