Dougu Diaozi Fish Method

1.The Diaozi Fish bought back , remove the scales and gills, remove the internal organs, wash them clean, marinate the onions and ginger in cooking wine with an appropriate amount of salt for 20 minutes to add flavor.

2. Dry the fish body with kitchen paper.Heat a pot, add an appropriate amount of oil, and slowly fry the Diaozi fish over medium heat.Do not flip the fish at will.Wait until it is set before flipping and frying the other side.

3. Fry both sides until golden brown and serve aside

4. Slice the ginger and garlic, and dice the shallots and set aside

5. Heat the oil in the pot, add the shallots, ginger and garlic slices and fry until fragrant

6.Put in an appropriate amount of spicy tempeh

7.Then pour an appropriate amount of cooking wine

8. Put the previously fried Diaozi fish into the pot! Put an appropriate amount of light soy sugar around the fish pot! Pepper, chili powder and a little water, cook over medium heat for about two to three minutes

9. Cook until the fish juices are reduced

10.Sprinkle some chopped green onion and millet for spicy garnish

11.Plate up and serve

Tips
Diaozi fish has more bones, so you should pay more attention when eating it.Put the fish into the pot and fry it.Don't flip it randomly, otherwise the skin will break easily! When frying fish, don’t use too much heat, as it will easily burn!
