Spicy curry razor clams How to make

1.Go to the market to buy fresh razor clams , go home and soak it in 20% salt water for 4 hours to let the razor clams spit out the sand.

2. Prepare the ingredients.

3. Boil the water, pour the razor clams into the boiling water and blanch the razor clams.Pick it up quickly after opening.

4. Boil the water while heating the pot, pour in the oil, and add the ginger and garlic , spices, and dried red pepper into the pot and stir-fry until fragrant.

5.Add bean paste and stir-fry for a while.When the aroma comes out, add in water and blanch of razor clams.

6.Pour in cooking wine, light soy sauce, vinegar, sugar, and curry and stir-fry.

7.Put in the green onions.

8.Finally add green and red pepper, chicken essence and pepper and stir-fry evenly.Do not over-fry the razor clams to avoid overcooking and affecting the taste.

Tips
Because razor clams have a lot of water, the purpose of blanching them is to prevent a lot of water from coming out when frying.
