Ingredients
Clams ( 1000g ) | Garlic cloves ( 1whole ) |

Cooking wine ( 10ml ) | White sugar ( 1 tsp ) |

How to make spicy fried clams

1. Soak the clams in salt water at least 2 hours in advance to allow them to spit out the sediment (you can also add a few drops of sesame oil to help them spit out quickly) sand).

2.Cut hot peppers and millet into circles.

3. Cut green onions diagonally into thick slices.

4. Cut the ginger into shreds and set aside.

5. Peel and chop the garlic.

11.Add fresh clams.(You can use light soy sauce instead)

12.Add salt and sugar to taste.

13.Turn off the heat and sprinkle with coriander.

14. Place on a plate and serve.
Tips
1.Clams must be soaked in salt water for a while in advance to allow them to fully spit out the sediment in their bodies.
2.The blanch time should not be too long, about 30 seconds, and you can fish it out as long as it opens.
3.If you don’t have fresh shellfish, you can use light soy sauce or seafood soy sauce instead.
