Pork belly ( 600g ) | Yellow wine ( 200g ) |
Raw Soybean ( 50g ) | Dark soybean ( 20g ) |
Rock sugar ( 30g ) | Scallions ( 1 large handful ) |
Ginger ( 1 chunk ) |
How to make Dongpo Pork

1. Blanch the pork belly in cold water and wash.

2. After cooling, cut into large pieces about 4cm square.

3.Take a thick cast iron pot or casserole and put green onions and ginger slices on the bottom.

4. Arrange the pork belly pieces with the skin down.

5.Put in rock sugar and rice wine.

6.Add light soy sauce and dark soy sauce.

7.Add boiling water until most of the meat is covered.Don't add too much water.

8.Bring to a boil, open the lid and cook for 10 minutes to take away the fishy smell of the meat.

9. Turn to low heat, cover tightly, and simmer for three hours.The lid must be tightly closed, and if necessary, it can be sealed with a clean damp cloth to prevent the water from evaporating too quickly.

10.After coming out of the pot, it will be soft and crispy, and you can enjoy it in large pieces.
Tips
Start the fire slowly and use less water.When the fire is sufficient, it will be beautiful.
