Ingredients

How to make home-style braised pork rice

1.Put the meat in cold water in the pot, add a few slices of ginger and cooking wine, and cook until 7 minutes cooked.I also put the eggs in and cook them (drain the eggs after boiling them for 7 minutes).

2. Dice mushrooms, cut onions in half, half into dices and half into strips, ginger and garlic Finely chop and peel the hard-boiled eggs and set aside.

3. Cut the cooked pork belly into small pieces.

4.Put oil in the pot (a little more than usual for cooking) and put the onion strips in Fry until golden brown and immediately take it out with a slotted spoon.Be sure not to burn it.

5. Chop the fried onion strips into mince and use this instead of crispy shallots (if If you can buy scallion cake, skip these two steps.This seems to be the best to buy in Taiwan)

6. Leave the oil for frying the onion strips in the pot, stir-fry the meat until the oil is released, then add minced ginger and garlic, cooking wine and 1 tablespoon soy sauce for color.

7. Add the diced mushrooms and the other half of the diced onions and stir-fry evenly.

8.Add water, shallot cake, salt, five-spice powder and rock sugar, then pour 1 Spoon the soy sauce, add the star anise and eggs, bring to a boil over high heat, then turn to medium to low heat and simmer for about 15 minutes (the time will change depending on the size of the dish).

9.While the meat is cooking, blanch the vegetables in a separate pot and set aside.

10. After 15 minutes, turn on high heat to collect the juice.Don’t drain it, but leave some soup.To make bibimbap delicious, pick out the star anise and throw it away.

11. The rice is cooked in advance, put into a slightly larger bowl, and sprinkled with black on top Garnish with sesame seeds, top the cooked braised pork, put some blanched vegetables and half a braised egg, and you have a bowl of braised pork rice.

Tips
You don’t need to add eggs and vegetables when you eat it at home.The portion I cooked is enough for 3 adults.You can have more or less mushrooms.Adding rock sugar can enhance the color.
