How to make braised noodles with tomatoes and eggs

1. First chop the tomatoes, then break the eggs into a bowl , add appropriate amount of salt and stir evenly.

2.Put an appropriate amount of cooking oil into the pot and put the eggs in after it is hot.After frying, break into pieces and set aside.

3.Then put the tomato cubes in the pot, stir-fry back and forth with a spatula until it is ready Press it properly so that the juice comes out more easily.Then pour in an appropriate amount of light soy sauce, add some water as appropriate, and simmer slowly over low heat.When it thickens, add the eggs and stir-fry, then take it out and keep it cold for later use.

4. Cook the noodles in another pot.Note here that if you have a water purifier at home, you can directly use cold water to overcook the noodles.If you haven't boiled the water beforehand, put it in cold water and let it cool before use.When the noodles are cooked, use a slotted ladle to scoop out the noodles, and then stir them continuously to prevent them from sticking and to make them cold faster.

5.Finally, the plating can be done.Since I don’t have chopped green onions at home, I used celery leaves instead.If you like to eat garlic, you can use a blender to mince the garlic and add an appropriate amount for stirring.You can also add some sesame oil.Finally mix and it is ready to eat.
