How to make fried eggs on toast

2. Use a mold to press the toast slices into discs, with the middle part left empty.
I used a dumpling wrapper mold to press it.Method: Place the mold in the middle of the toast slices, flatten it with a kitchen knife and pat it hard.The middle part will be separated from the edge.Use the stainless steel mold to mix evenly.It is very convenient.
3. Heat a pan with a little oil, add toast slices, and break in the eggs.Use chopsticks to hold the egg yolk in the middle and it will set in a few seconds so that it won't move to one side.

4. Fry over low heat and sprinkle a little salt on the eggs.
The heat must be low, otherwise the toast slices will be burnt and the eggs will still be raw.
5. After the egg white turns white, cover it with the bread slices you just scooped out.

6. Turn over and continue frying over low heat for a while.

7. Transfer to a plate and sprinkle some chopped basil.

Tips
Any toast bread can be used, I used red bean toast bread slices.
The mold can be of any shape, be it a cup mouth, a stainless steel mold, or a dumpling wrapper mold.When pressing, use a kitchen knife to flatten the top and tap hard to get the hollowed out part and the separated edges of the bread slices to remain the same.The thickness will not cause it to flatten.
Be sure to use low heat when frying, otherwise the bread slices will be burnt and the egg will still be raw.Be careful when turning it over to avoid crushing the egg yolk and spilling out, which will affect the appearance.
You can season the eggs with salt and pepper.
Sprinkle chopped basil at the end to enhance the flavor.It doesn’t matter if you don’t use dried scallions or fresh chopped scallions, or you can just add nothing at all.It’s also delicious when squeezed into tomato sauce, so use it yourself!
