How to make lotus paste and egg yolk mooncakes

1.Put peanut oil, water and invert syrup Pour into a bowl and mix well!

2.Sift the flour into the inverted syrup, knead it into a ball and put it in the refrigerator for an hour! When refrigerated, weigh the lotus paste filling. The filling is 35 grams and the skin is 15 grams! The lotus paste filling and salted duck eggs weigh 35 grams together! I only used half of the egg yolk because I was making a 50g mooncake mold!

3. Cut the egg yolk in half, wrap it in lotus paste, and close it!

4.Make the filling into a ball!

5.Weigh the refrigerated mooncake skin, 15 is enough! Flatten the skin, preferably like a dumpling skin! Wrapped with lotus paste and egg yolk filling!

6.Wrap everything in order!

7. Then use your favorite mold to press out the flower shape, and line the oven with oiled paper! Put everything pressed into the baking pan! First, sprinkle some flour on the unshaped mooncake to prevent it from sticking. If you don’t sprinkle it, you might be afraid that it will be difficult to release the mooncake after it is pressed into a flower shape!

8.Put it in the mold!

9.Connect the mold and flatten it

10. Press it into a baking pan lined with greaseproof paper!

11.After pressing, preheat the oven to 200 degrees and spray some water on the mooncakes.Put it in the preheated oven and bake for 5 minutes.Take it out and brush it with all the egg wash! Then adjust the oven heat to 180 degrees and bake for 20 minutes! In the last few minutes, just watch the fire by yourself and color until you are satisfied! There is no need to bake the egg yolks in advance, because only half an egg yolk is used and they are cooked easily!

12.Mooncakes after baking!
