How to make bitter melon dumplings

1.Put the flour into a basin.

2. Pour an appropriate amount of warm water in circles and stir until it becomes like cotton wool.

3. Knead into a smooth dough and let it rise for about thirty minutes.

4. Use the rising time of the dough to prepare the filling: chop the pork, green onion and ginger into small pieces end.

5. Put them into the container together.

6.Add cooking oil, light soy sauce, cooking wine, salt, chicken essence, and oyster sauce.

7.Use chopsticks to stir clockwise in one direction until the meat filling is thick.

8. Chop the bitter melon and carrot into fine pieces and add them to the meat filling.

9. Stir evenly.

10. Knead the risen dough evenly and divide it into even dough pieces.

11.Press flat with the palm of your hand.

12. Then use a rolling pin to roll it into a dumpling wrapper.

13.Take a piece of pie crust and add appropriate amount of fillings.

14. Fold in half and pinch the middle tightly.

15.Pinch out pleats from one side.

16.Change your hands and pinch the other side into pleats, and wrap all the dumplings in sequence good.
