Ingredients
Chives ( 200 grams ) | Eggs ( 3 ) |

Corn oil ( 15ml ) | Sesame oil ( 10ml ) |

How to make leek box

1. Add 50ml to the flour Boil water and stir with chopsticks until fluffy.

2. Then slowly add cold water and knead into a smooth dough.(The dough kneaded with half boiling water and half cold water will be softer and will taste softer after frying)

3.Wash and chop the leeks, add corn oil, sesame oil, and pepper and stir evenly.Beat the eggs, add an appropriate amount of salt to the egg liquid, mix well, and prepare the dried shrimps.(Do not add salt to the leeks, as it will make the soup easier)

4. Heat the oil in the pan and add the egg liquid.

5. When it solidifies slightly, use chopsticks to stir it into lumps.

6.Add the dried shrimps and stir-fry evenly.

7. When it cools down slightly, add it to the leeks and mix well.

8. Take out the dough and knead it into a long strip, cut it into small pieces of about 30 grams, and roll it into dough.

9.Put the leek filling in the middle of the dough.

10.Pinch in the middle.

11.Pinch the two sides tightly.

12.Use your right thumb and index finger to press and pinch out the pattern, as shown in the picture.

13.All done.

14. Add 20ml corn oil to a flat-bottomed non-stick pan and add 1/4 of the water from the leek box., cover and cook for about 5 minutes.

15. Wait until you hear crackling sounds in the pot.After one minute, open the lid and turn over.(Turn over when the water is dry)

16. Change to low heat and fry until both sides are golden brown.

Tips
There is no need to add salt to the leek filling.The eggs and dried shrimps are both salty, so the saltiness is just right.
