Recipe for cold spinach and shredded pork noodles

2.Pick the spinach root and fold the too long leaf neck into two sections.Wash and blanch in hot water (add a few drops of oil to the pot).Soak in cold water after cutting off the growth.

3. Cut the pork into shreds with a knife.

4. Add cooking wine, light soy sauce, pepper, and dry starch to the shredded pork.Mix well and season for 10 minutes.

5. Chop the red pepper, mix with sesame seeds, and put it in a heat-resistant vessel.

6. Heat a small amount of oil in the pot, add red pepper and sesame seeds to make them fragrant ,spare.

7. Boil the vermicelli in hot water until soft and soak in cold boiling water.

8. Crack the eggs into a bowl and stir them up with chopsticks.

9. Turn on the stove and heat the pot, add a few drops of oil, and the oil will slosh evenly on the bottom of the pot , omelette, turn off the heat.

10. Turn on the stove, put a little oil in the pot, add shredded pork and fry until cooked.Let the pot cool and set aside.

11. Take a bowl and add oyster sauce, salt, chicken essence, sugar, vinegar, Sesame oil, sesame oil, a small amount of boiled water, stir with chopsticks until the particles melt.

Tips
1.When blanching spinach, add a few drops of oil to keep the dish green.
2.Don’t put too much oil when spreading the egg skin, otherwise the egg skin will not be spread thinly and will pile up thickly.
