How to make hot and sour noodles

1. Add two bowls of flour to half a bowl of water and one egg, and stir evenly.

2. Knead it into a smooth dough and let it rest for about 20 minutes. You can knead more during this period. The noodles are chewier.

3. Roll the dough into a round cake.

4. Cut into the width you like, I like to eat wider ones.

5. Shake it with your hand and all the noodles will be cooked. If you add too much water, the noodles will be mixed. If they are soft, they will stick together.

6.Put a spoonful of chili oil in the bowl and mince three petals.

7.Boil the bone soup in advance (put cold water into the pot, put the bones, ginger slices and cooking wine together Boil until all the blood comes out, take it out, and put cold water into the pot. After the water boils, simmer on low heat for more than 2 hours.I usually make more at one time and take it out directly when eating)

9. Cook the noodles, take them out and let them cool.

10.Put it in a bowl and put it on top of your favorite vegetables.

11.I put fish balls with coriander and dried tofu.

8.Pour in an appropriate amount of bone broth, if not boiling water.
Tips
1.When making noodles, be sure to make them a little harder. If they are too soft, they will stick together easily and break when cooked.
2.The soup is up to you.You can also adjust the soup and use it to cook noodles.
3.The vegetables and the like inside are up to personal preference.I put what I have at home.
4.Because the chili oil I bought contains salt, I didn’t add it.If you squeeze it yourself, add the right amount of seasoning.
