How to make cold noodles

3. Pour a little oil into the pot and heat it up.Add the peanuts and stir-fry over low heat until fragrant.Remove the oil and let cool until crispy.Set aside.

4. Pour an appropriate amount of water into the pot and bring to a boil, add noodles, add a few drops of cooking oil and Cook it with a little salt until it's 70 to 80% cooked, but don't overcook it.

5. Prepare a bowl of cold boiled water, drain the cooked noodles into the cold water.

6. Remove the water and put it on a plate or chopping board, add a small cap of sesame oil Mix well to prevent sticking.

7. Mix well and spread it out to cool.The cold noodles are ready.Set them aside for later use..

8. Shred the cucumber, mince the garlic, cut the onion into flowers, peel the peanuts and pat them with a kitchen knife broken.

9. Prepare a small bowl, add light soy sauce, balsamic vinegar, sugar, sesame oil, and Sichuan peppercorns Oil, salt, chicken essence, oyster sauce, mix well.

10. Prepare a larger bowl, add noodles, onions, garlic, cucumber shreds, Peanuts, pour in the prepared juice, and scoop in 1 tablespoon of spicy oil.

Tips
When cooking noodles, don't overcook them, as they may break easily.Just cook them to a medium-to-80% doneness.
Add spicy oil according to personal taste.
You can add Zheer root, chopped kohlrabi, soybean sprouts, etc.to the mixed vegetables.
Just use the same pepper oil and pepper powder.If you don’t like hemp, you can omit it and replace it with pepper or five-spice powder, or you can leave it out at all.
Vinegar can be increased or decreased according to personal taste.If you like it sour and spicy, add more, otherwise add less.
