How to make Shanghai soft fried noodles

1. Cut the tenderloin into shreds and add salt, chicken essence, sugar and cooking wine.Stir vigorously.Add egg white and corn starch.Stir evenly and add oil sealant and set aside

2.Put water in the pot and add salt to boil, then add noodles and cook in cold water p>

3.Add dark soy sauce and pepper, stir well and set aside

4. Boil water in a pot, add oil and salt, cook the mushrooms and vegetables, remove and drain the water

5.Heat oil in a pan, add shredded pork when the oil is hot, fry until cooked and set aside

Tips
To make soft fried noodles, the noodles will not stick.Method 1: Steam the uncooked noodles for about 15 minutes and then fry them after cooking.Method 2: Add more salt when cooking the noodles and they will not stick.In this recipe we use the second method.
