How to make tomato and egg noodles
1.Prepare the ingredients, the tomatoes can be larger
2.Peel and dice the tomatoes, beat the eggs, and chop the green onions.(Peel the tomatoes and boil them in boiling water for easy peeling.I am lazy, so I peeled them off after lightly roasting them over fire)

3.Put oil into the pot, pour the egg liquid in first, and scramble the egg flakes

4.Speed up the diced tomatoes and stir-fry until they are almost ready

5. Add salt, pepper and vinegar (because eggs have a strong flavor, I usually don’t add chicken essence or MSG) and then add A bowl of water, turn to low heat to collect the juice

6. This is done, use While the juice is collecting, roll out the noodles

7. Put the water in the pot to cook the noodles.Sprinkle a little salt to make the noodles more chewy

8. Take the noodles out of the pot and cook them. It’s almost done. Before taking the sauerkraut out of the pot, add a little starch or leave it out

9. Pour the sauerkraut on the noodles...Let's start and serve another bowl of noodle soup. It's great
Tips
Peel the tomatoes and roast them over a fire. When you see the skin is bubbling, rinse them with cold water and they will peel easily.Generally, I like to use wide noodles or leek-leaf noodles, which are more chewy than thin noodles and round noodles
