How to make fish head and tender tofu soup

1. Ask the merchant to cut the bighead fish (silver carp) into pieces, add salt and cooking wine and marinate for 20 minutes.

2. Prepare two pieces of tofu, cut onions, ginger and garlic, and set aside coriander.

3.Pour peanut oil into the pot, add onion, ginger and garlic and sauté until fragrant.

4.Put the fish pieces into the pot.

5. Fry both sides of the fish pieces.You don’t need to fry them for too long.

6. After frying both sides of the fish head, add water to cover the fish head.

7. After the fire is boiled, skim off the scum.

8. Skim off the foam, reduce to low heat and simmer for ten minutes.

9.After ten minutes, the soup will become thick and white, cut the soft tofu into pieces and put it in , cook over low heat for two minutes.

10.Sprinkle a little chicken powder to taste before serving.

Tips
Just fry the fish head once, it doesn’t need to be fried for too long.Bring to a boil over high heat and skim off the foam, then reduce to low heat and simmer for ten minutes.Add the soft tofu and cook for two minutes.The soft tofu does not need to be cooked for too long.
