Ingredients
Grass carp ( 1 ) | Tofu ( 300g ) |
Garlic ( 5 cloves ) | Ginger ( 20g ) |
Cooking wine ( 15ml ) | Chicken Essence ( 10g ) |
Seafood soy sauce ( 15ml ) | Red pepper ( 1 piece ) |
Salt ( 3 grams ) | Green onions ( 1 root ) |
Salad oil ( 50g ) | Boiled water ( 150ml ) |
How to make fish head stewed with tofu

1. Wash the grass carp head, cut it into two parts from the middle, pour in cooking wine, seafood soy sauce and marinate for 10 minutes

2.Cut the tofu into pieces, blanch it in boiling water and set aside
3.Slice onion, ginger, garlic, and red pepper and set aside

4.Put the fish head into the oil pan and fry it until brown on both sides

5.Add onion, ginger and garlic Stir-fry

6.Pour in tofu

7. Pour in the remaining marinated fish soup and boiling water to submerge the tofu, add red pepper and simmer over medium heat for 10 minutes

8.Add salt, chicken essence, collect juice, remove from pot and plate.
Tips
1.The fish head should be fried thoroughly.On the one hand, it will add flavor to the dish, and on the other hand, it will not fall apart during stew.
2.Blanch the tofu in boiling water to remove the gypsum smell and ensure that the dish does not taste bad.
3.Because seafood soy sauce itself is salty, less salt should be added.
