Ingredients
Snail ( 2 pounds ) | Salt, sesame oil, lard ( appropriate amount ) |
Onion, ginger and garlic (appropriate amount ) | Star anise ( 4 ) |
Cinnamon ( 2 pieces ) | Zanthoxylum bungeanum ( 2 grams ) |
Chili powder, tempeh, millet spicy ( Adequate amount (add less if you can’t eat it) ) | Cooking wine ( 1 spoon ) |
Light soy sauce ( 2 spoons ) | Oyster sauce ( 1 spoon ) |

Summer is here and I went to the fields to make a spicy snail sauce recipe

1.Go to the fields to catch some snails

2.Wash the snails, add sesame oil, and keep them for two days (change the water every four hours)

3.Put the snails in cold water

4.Cook over high heat until the snail caps fall off naturally

5.Use a toothpick to pick out the snail meat one by one

6. Wash 2-3 times repeatedly and remove the snail meat

7. Lard is used in the pot (there is no other reason to use lard, it just tastes more fragrant, I Grandma’s generation used to do this)

8.Pour in the snail meat, stir-fry over high heat, and stir-fry until the snail meat is browned

9.Pour in onion, ginger, garlic, star anise, cinnamon and peppercorns, and stir-fry together until fragrant

10.Pour in the chili powder and stir-fry the red oil

11.Add black bean sauce and millet spicy

12.Add cooking wine, light soy sauce, oyster sauce, sugar (sugar brings freshness), and salt, stir-fry until the flavors are infused

13.The finished snail hot sauce

14.Two spoonfuls of bibimbap rice powder
Tips
1.There are many so-called tutorials on the Internet.Salt and white vinegar should be added.It is not recommended that you put white vinegar in.The snails are easy to die.In fact, you can just drop sesame oil like I did (there is also a saying that you put rice washing water and salt, which needs to be verified.People who have tried it are welcome to answer in the comment area)
2.The tail of the snail meat must be removed and cannot be eaten
