2. Add vegetable oil to the pot. When the oil is hot, add the catfish and fry for a few minutes.

3. Fry one side until golden brown, then turn it over.Be careful not to break the fish skin when turning it over.

4. Fry until both sides are golden brown, then add ginger slices, millet pepper, and some garlic sprouts.

5.Add cooking wine, light soy sauce, salt, sugar and other condiments, add water, and cover half of it Just add enough fish.Note that you need to add enough water at one time.It is best not to add water halfway when cooking fish.

6. Add the lid and cook over medium-low heat for about 20 minutes to allow the fish to cook.

7. Remove the lid, add the remaining garlic sprouts and red pepper, cook for a while, and keep color.

8. Arrange the fish pieces in the shape of the fish, top with fish soup and ingredients.
Tips
1.If you like spicy food, you can put millet peppers into the oil pan and fry them to get spicy flavor before frying the fish; 2.The cooking time of the fish should not be too short, otherwise the fish will not be soft enough and the taste will be affected.
