Fried cowpea meat Recipe

1. Prepare all the ingredients.

2.Wash the meat and cut into thin slices.Add half a spoonful of salt and spread evenly with your hands.Marinate for about ten minutes.

3.Pick off the head and tail of the cowpea, select segments and clean them.Drain the water and cut into small pieces.

4. Heat the pot and pour a little peanut oil.Heat 50% of the oil, add the cowpeas and stir-fry for half a minute.Add a little cold water and switch to medium heat.Cover the pot and simmer for half a minute.Add a little salt, stir-fry until evenly mixed, and set aside.

5.Pour an appropriate amount of peanut oil into the pot again and heat the oil to 50%.Put the meat in and stir-fry until the meat changes colour, add a little soy sauce and stir-fry briefly.

6.Pour in the cowpeas and stir-fry evenly.Then turn off the heat.

Tips
Cowpeas are difficult to fry, so add a little cold water to simmer them.Don't keep stir-frying the cowpeas, as a lot of beans will fall out.The meat can be replaced with lean meat or pork belly according to personal preference.
