How to make Zigong Fresh Pepper Rabbit
1. Wash the rabbit, add a little starch, two spoons of cooking wine, one spoon of salt, and marinate for an hour.

2. Cut green pepper and millet pepper into sections, and shred the ginger.(Zigong cuisine must have a lot of ginger)

3. Leave a few millet peppers chopped , a piece of garlic and a piece of ginger chopped.

4.Add oil, raise the oil temperature, put the rabbit into the pot and stir-fry, When the rabbit meat turns white, transfer it to a plate.(You need more oil)

5.Put two spoons of bean paste into the pot and stir-fry it.Red oil.

6.Put the minced ginger, minced garlic, and chopped millet pepper into the pot and stir-fry.

7.Add appropriate amount of hot water.

8.After the water boils, add rabbit meat and cook for three minutes.

9. Add the ginger and cook for two minutes.

Tips
When pickling, add less starch and more salt to make it more flavorful.
