Ingredients
Pork belly ( 100g ) | Eggplant ( 1 root ) |
| Green pepper ( half ) | Tomato ( 1 piece ) |
Salt ( appropriate amount ) | Light soy sauce (appropriate amount) | Panthoxylum bungeanum (appropriate amount) |
How to cook pork with double eggplant

1. Prepare the materials as shown in the figure.

2. Wash the pork belly and put it into the pot, add an appropriate amount of water, a few peppercorns and 1 piece of ginger to cook the meat.(As long as it can be easily inserted with chopsticks)

3.Chop tomatoes and green peppers , cut eggplant into pieces.

4. Cut the cooked pork belly into small cubes.

5. Pour oil into a hot pan and heat until 80% hot.

6. Add pork belly and stir-fry for 1 minute.

7.Add tomatoes and stir-fry for 20 seconds.

8.Pour in a bowl of water and bring to a boil over high heat, then reduce to medium heat and simmer for 2 minutes.

9.Add eggplant and cook until the soup thickens.

10.Add appropriate amount of salt and stir-fry for 20 seconds.

11. Add the green pepper and stir-fry for 20 seconds.

12. Add appropriate amount of light soy sauce and stir-fry for 20 seconds before turning off the heat.

13.Home-cooked and delicious!
