How to make fried eggs with bitter melon

1.Wash the bitter melon, cut it in half and take out the flesh inside.

2. Cut half of the bitter melon into strips first, and then into cubes.

3. Marinate the diced bitter melon with appropriate amount of salt for 10 minutes, squeeze out the water and set aside.It can basically remove most of the bitterness.

4. Beat the eggs into egg liquid, add a little salt, pepper, and diced bitter melon and stir evenly.
