How to make homemade shredded pork with Beijing sauce

1. Cut the pork loin into small strips and marinate it with cornstarch, light soy sauce, white pepper, and chicken essence for a while.

2. Cut the enoki mushrooms into small sections, boil them in boiling water, and remove them after cooking.

3. Cut the ginger into shreds.

4. Heat the oil and add oil, stir-fry the pork until it changes color, add a spoonful of sweet noodle sauce , stir-fry evenly, add the enoki mushrooms, and continue to stir-fry evenly.

5.Add light soy sauce, dark soy sauce, and chicken essence for seasoning and coloring.
Tips
Cut the tofu skin into cubes of appropriate size and blanch in boiling water to increase toughness.
Various brands of sweet noodle sauce have different sweetness and saltiness, so you can try adding them yourself.
The traditional shredded pork with Beijing sauce* is battered with egg white and fried twice, first frying the meat and then frying the sauce.The oil is too much and unhealthy, so I changed it to only use cornstarch to batter, and cook it once, and then fry it in the sauce.Adding enoki mushrooms to the shredded meat can neutralize the fat.
