Ingredients

How to braised eggplant with tofu

1. Prepare the ingredients.Tofu, eggplant, red pepper, pork belly, onion, ginger, garlic, coriander.

2. Cut the tofu into thick slices of about 1 cm.

3. Chop onion, ginger and garlic and set aside.Shred red pepper and set aside.

4. Slice the pork belly and set aside.

5. Add in seasonings and marinate the pork belly slices.Add salt, oyster sauce, light soy sauce, pepper powder, and starch.

6.Stir evenly and marinate for 5-10 minutes.

7.Crack an egg in a bowl and mix well.

8. Add tofu slices and coat with egg liquid.

9. Heat oil in a pot, add tofu slices and fry.

10.Turn over and fry on both sides until golden brown.

11. Take out the fried tofu.

12. Cut the eggplant into strips and set aside.

13. Add a small amount of salt to the eggplant and add some starch.Stir to coat the eggplant with some starch.

14. Heat oil in a pot, add eggplant and fry.

15. Once the eggplant has shrunk significantly and is somewhat golden on all sides, it is ready to serve.

16. Heat oil in a pot until it is 50% hot, add pork belly and stir-fry Evenly.

17. Add onion, ginger and garlic and stir-fry.

18. Add the tofu slices and continue stir-frying.

19. Add the eggplant strips and continue to stir-fry, add salt and a small amount of light soy sauce.

20. Add 200ml of water, cover and simmer.

21. Simmer for about five minutes, add shredded red pepper and stir-fry evenly.

22. Collect the juice and sprinkle with coriander foam before serving.

23.A very delicious plate of tofu braised eggplant is ready.
Tips
My production process is not simple but rather complicated.Friends who don't like oil can just fry it and stew it directly, which also has a good taste.The key point is that the pork belly enhances the flavor, so this dish will not fail to be fragrant.
