1.Wash the pork belly and cut into small pieces.

2. Add water to the pot, add pork belly and Sichuan peppercorns, and blanch for five minutes.

3. Rinse off the foam with cold water.

4. Pour oil into the pot.When the oil temperature is 50% hot, add rock sugar and lower the heat.Fry the rock sugar to melt.

5.Put in the pork belly and add sugar color.

Tips
Blanch water and add Sichuan peppercorns to effectively remove the fishy smell.If you like spicy food, you can add a few dried red peppers before stewing.
