Ingredients
Eggplant ( One ) | Salad oil ( appropriate amount ) |

How to make flavored eggplant

1. Prepare onions, ginger, dried chilies and Sichuan peppercorns.

2. Prepare an eggplant.

3. Remove the flesh and cut into diamond-shaped pieces.

4. Spray water on the eggplant pieces.

5. Pat a layer of starch.

6. Repeat steps 4 and 5 again.

7.The oil temperature is 60%.

8.Add in the eggplant and flip it after setting.

9. Fry until golden and take out.

10. After the oil temperature rises, fry again for one minute.

11. Remove and control the oil.

12. Mix the sauce: add salt, sugar and MSG in the bowl.

13. Light soy sauce and balsamic vinegar, stir well.

14. Heat the pot and add salad oil.

15. Saute onion, ginger, dried chili pepper and Sichuan peppercorns.

16. Pour in the sauce.

17. Boil until thick.

18. Pour in the eggplant, stir-fry quickly and remove from the pan.
