Ingredients
Pork belly ( 400g ) | Dried beans (amount after soaking) ( 200g ) |
Ginger ( 10g ) | Dried chili pepper ( 4 pieces ) |
Octagonal ( 1 piece ) | Cooking wine ( 15g ) |
Light soy sauce ( 10g ) | Dark soy sauce ( 5 grams ) |
Rock sugar ( 10g ) | Garlic ( 25g ) |
Green onions (1 section is about 30 grams) | Salt ( 2 grams ) |
Boiling water ( appropriate amount ) |
How to make braised meat with dried beans

1.Main ingredients: Soak dried beans in warm water at least 2 hours in advance.

2. Prepare other auxiliary materials.

3. Slice the ginger, cut the green onions into circles of about 1 cm, and cut the garlic into small pieces.

4. Wash the dried beans and cut them into sections about 4 cm long.

5. Cut the pork belly into dices of about 2-3 cm.

6. Heat the cast iron pot, turn to medium to low heat and add the pork belly directly.

7. Fry until the surface is golden and oily, then use a spatula to push the meat aside.

8. Add ginger, onion, garlic, star anise and dried chili pepper and saute until fragrant.

Tips
If you don't have a cast iron pan, you can use a non-stick pan for frying and transfer to a casserole or saucepan when simmering.
