Yellow Clam ( 1200g ) | Oil ( 20 grams ) |
Salt ( 1g ) | Soybean paste ( 2 tablespoons ) div> |
Homemade hot sauce ( 2 tablespoons ) | Dried red pepper (appropriate amount) |
Onions ( 2 pcs ) | Ginger ( 10g ) |
Garlic ( 15g ) | Cilantro ( 15g ) |
How to make spicy fried clams

1. Put the yellow clams in the pot with cold water, turn off the heat immediately after the water boils and remove them

2.Peel the yellow clams, clean them and set aside

3. Slice green onion, cut ginger into thick strips, slice garlic, cut dry red pepper into sections, cut coriander into sections

4. Heat the oil in a pan, add onion slices, dried red pepper, ginger and garlic and saute until fragrant

5.Put in soybean paste

6.Add homemade chili sauce and stir well

7.Add the clam meat and stir-fry for a while

8.Add salt to taste and stir well p>

9.Add the coriander segments and stir well, turn off the heat

10.Plate and serve
Tips
1.The time for blanching clams should not be too long to avoid overcooking the clam meat and affecting the taste
2.For the recipe of homemade hot sauce, you can refer to my previous recipe.If you don’t want to make it yourself, you can also use Pixian bean paste or garlic hot sauce instead
3.Scallions have a rich flavor.If you don’t have them, you can use onions or green onions
4.The amount of dry red pepper is added according to personal taste
5.The overall cooking time of this dish should not be too long.Stir-frying the clam meat will harden and affect the taste
