2. Wash and cut the hairtail fish into small sections.Add green onions and ginger powder to a bowl.Mix garlic, cooking wine, starch, and egg white and marinate for more than 30 minutes.

3.Cut green onions, garlic, green peppers into cubes, and carrots into slices.

4. Coat the hairtail fish with starch.

5. Pour oil into the pan and heat it up, add the hairtail fish wrapped in starch and fry until both sides golden.

6. Remove and control the oil.(Place the plate with kitchen oil-absorbing paper)

7. Sauce adjustment: add oil to water starch, Stir together light soy sauce, salt, chicken essence and thirteen spices.

8. Pour oil into the pan and heat it up, add onion and garlic and saute until fragrant.

9. Pour in the prepared juice, add green peppers and carrots and stir well.

10.Pour in the fried hairtail.

11. Stir fry quickly until the hairtail is coated in the soup.

12. Remove from pot and plate.
Tips
Fried hairtail over medium-low heat will be too deep-fried, which will affect the taste.
