Ingredients
Vermicelli ( Half package ) | Scallions ( three or four ) |
Cilantro ( Two ) | Eggs ( One ) |

Light soy sauce (a small spoonful) | Vinegar (a small spoonful ) |

Super simple way to make Yangchun noodles

1. Wash and prepare all materials.

2.Add two bowls of water to the pot and turn on the heat

3.While the water is boiling, cut the green onions into small sections and put them into a bowl.

4.Add salt, seasonings, chicken essence, light soy sauce, vinegar and mushroom sauce.Set aside.

5. Add eggs to the bubbling water in the pot

7.Add the lettuce into the noodles and turn them over.

8.Pour the soup and noodles into the bowl you just prepared, and then sprinkle with coriander.Mix well and that's it.

6.After the eggs are set, add the noodles (I made the amount for one person) and spread them with chopsticks to prevent them from sticking., then cover and cook the noodles.
Tips
1.Personally, I think it’s best to put the eggs when the water starts to bubble.If you add the eggs after the water boils, they will fall apart.
2.If you like spicy food, you can add some chili sauce!
