Lotus root (One section) | Onion ( Two roots span> ) |
Pickled peppers ( 4 pieces ) | Garlic ( 4 pieces ) |
Corn oil ( appropriate amount ) | White rice vinegar ( appropriate amount ) |
White sugar ( Appropriate amount ) | Salt ( Appropriate amount ) |
Chili padi ( 4 pcs ) |
How to make cold lotus root

1. Preparation materials: Peel and wash lotus root, cut into 3 mm thick slices, mince garlic, dice chilli padi and green onion.

2. Boil the lotus root slices in boiling water for half a minute and remove.

3.Add appropriate amount of white rice vinegar, salt and sugar and mix well
5.Heat a clean pot, add an appropriate amount of corn oil to heat, pour the hot oil on the chili and garlic to simmer

6. Pour into the lotus root slices, mix well, and refrigerate for 2 hours for a better taste!

7.Plate and sprinkle with chopped green onion

Tips
Buy tender lotus roots for a crispier texture and easier skinning.It will become discolored due to oxidation, so peel it, wash it, slice it, and soak it in clean water immediately.When the water in the pot boils, put it in the pot and remove it for half a minute (it is best not to use an iron pot, as it is easy to change color)
