How to make moldy tofu

1. Cut the tofu into small pieces evenly.The size does not matter, as long as it is uniform

2. Find a basket or grate, put a cabbage leaf or corn leaf on it, and place the tofu cubes evenly on the cabbage leaf , leave a gap between tofu

3. After placing it, cover it with a layer of cabbage Leaves or corn leaves, put them in a cool place for 10 days.During this period, pay attention to the appearance of the tofu.It will be ready when it turns slightly red and sticky

4.Mix the salt, cracked Sichuan peppercorns and pepper evenly and put them on a spacious plate
5.Pour high-quality white wine into a bowl, dip the moldy tofu in the white wine and quickly remove and coat with salt

7. Find a sterilized glass bottle, put the tofu piece by piece into the glass bottle, stack it without leaving any gaps, and seal it for a week before eating

8.The prepared molded tofu can be mixed with sesame oil and minced green onion and ginger before eating

1Can only be done in autumn and winter
2 The tofu must be northern tofu
3 The moldy appearance is reddish sticky substance and smells bad
4 The glass bottle must be oil-free and water-free
