Cod stewed with tofu

1. Prepare the ingredients, wash and cut the fish into pieces, cut the tofu into pieces, cut the green onion into sections, and ginger Slice and mince garlic and coriander.

2. Pour an appropriate amount of oil into the pot.When the oil boils, pour in the fish pieces and fry them.

3. Add onion segments, ginger slices, minced garlic, Sichuan peppercorns, and star anise and stir-fry for a few times , then pour in cooking wine, light soy sauce, dark soy sauce, white vinegar and sugar, stir well and then add water and fish meat.

4. After the pot is boiled over high heat, add the tofu and then turn to medium heat and simmer.

5. When the soup in the pot is almost dry, add salt and chicken essence to taste.

6.Sprinkle with coriander and serve.
Tips
Drain or wipe off the water from the fish.After simmering over high heat, leave a gap in the pot lid to prevent the soup from overflowing.
