Hakka way of brewing bitter melon

1. Wash the bitter melon, cut into large pieces about 3 fingers wide, and then soak in light salt water After 15 minutes, the water level will be enough to cover the bitter melon.

2. Peel the carrot and cut into small dices and set aside.

3.Soak soybeans, glutinous rice, and dried mushrooms in warm water for about 1 hour respectively, and wash the soybeans and glutinous rice.Drain and drain the mushrooms, then remove the mushrooms and cut them into small pieces.Keep the water in which the mushrooms were soaked and don’t pour them.

Tips
There is no need to stir the glutinous rice when adjusting the filling, because the glutinous rice itself is sticky.When the filling is stuffed into the bitter melon and cooked in the pot, it will naturally stick together.When the bitter melon is stuffed, use chopsticks to poke the filling firmly.
