Ingredients
Low-gluten flour ( 80g ) | White sugar ( 50g ) |
Milk ( 60g ) | Butter ( 30g ) |
Eggs ( 4 ) | Cranberries ( Adequate amount ) |
Lemon juice ( A few drops ) |
How to make cup cakes

1.All ingredients are prepared in advance.Soften the butter, beat the egg yolks and egg whites into two water-free and oil-free containers

2. Beat the egg yolks , then add 10g of white sugar, butter, milk, and egg yolk liquid and stir evenly, then sift the low-gluten flour and add in the same mixture
3.Add a few drops of lemon juice to the egg whites.Add 1/3 of the remaining sugar into the egg whites, use a whisk to beat into large bubbles, then add 1/3 of the sugar and beat into small bubbles as shown below

4.Add the remaining sugar and beat until the egg whites can be completely held in place when the whisk is lifted and the shape is stable

5.Put the beaten egg whites into the egg yolk liquid in three batches, and mix evenly with a spatula.

6. Mixing is complete~~

7. Pour the cake liquid into the mold until it is seventy-eight percent full.Sprinkle the cranberries on it and it’s ready

8.Set the oven to 160 degrees and bake for about forty or fifty minutes

Tips
1 :The basin where the eggs are placed must be free of water and oil, otherwise it will affect the whipping process!
2: Because I don’t like it to be too sweet, I put relatively less sugar.If you like it sweet, you can increase it appropriately.
3: When mixing egg whites and egg yolks, do not stir them in circles, but stir them up and down!
4: Each oven is different and the baking time is also different.It is best to observe the baking process at any time.Use a toothpick to poke it in and pull it out.The toothpick should be clean and not sticky.
